Spaghetti alle vongole (spaghetti with clams) instructions

  1. Important to soak the clams in salted water for a few hours. Drain and rinse many times tapping the clams open side down to remove any sand. When ready to cook, drain them and set aside. Cook pasta in salted water, be ready to drain 1 min before cooking time. Meanwhile fry garlic gently in oil. Add a few chilli flakes. Turn up heat. Add clams. Add wine and let it evaporate. Now cover and leave the steam to cook them for about 5-6 min.
  2. Drain pasta 1 min before cooking time is up. Add immediately to clams. Mix well for 1 min. Serve with parsley :).
