  2. You need 1 of onion thinly sliced.
  3. It's 3 of garlic cloves.
  4. You need 8 oz of mushrooms, sliced.
  5. It's 2 of medium zucchini’s, sliced.
  6. Prepare 1 (28 oz) of can diced tomatoes with juices.
  7. You need 1 teaspoon of dried oregano.
  8. It's 1/2 teaspoon of red pepper flakes.
  9. Prepare 5 handfuls of spinach.
  10. It's 8 oz of spaghetti.

Vegetable spaghetti step by step

  1. Cook the spaghetti in a separate pot..
  2. In a large skillet, heat oil on medium high, add mushrooms, zucchini, onion, garlic and spices, cook for about 10 minutes, or until mushrooms and zucchini are tender..
  3. Stir in tomatoes and cook until heated through, add spinach at the end, taste for seasoning..
  4. Serve veggies over spaghetti.

Layer with half each of the spaghetti mixture, cottage cheese, vegetables and mozzarella cheese. Bring a large pot of salted water to a boil.
