- add olive oil and chorizo and fry off for 5minutes or until golden.
- with 1 minute to go add the garlic to ensure it cooks but doesnt get bitter as well as origanum.
- add white wine to pan and deglaze making sure you get all the caramalised fat from the chorizo and reduce by 2/3.
- prepare salted boiling water for pasta with a little olive oil to ensure the pasta doesnt boil over and add pasta.
- once white wine has reduced add the cream and a splach of white wine vinegar for richness once this cream comes up to the boil, reduce heat and add peas season as desired once ready to serve.
- drain pasta, mix sauce and pasta together and serve with a liberal amount of cheese.
