  1. Prepare 16 oz of chorizo sausage.
  2. You need 3 cups of cheddar.
  3. It's 16 oz of penne pasta.

  5. You need 1/2 cup of flour.
  6. You need 3 cups of milk.
  7. Prepare 1 cup of heavy cream.
  8. You need 1 T of worchestshire sauce.
  9. You need 1/2 t of ground mustard.
  10. You need to taste of salt and pepper.
  11. You need 1 can of corn with peppers (mexicorn).

Mexican mac and cheese step by step

  1. Set oven to 350.
  2. Remove casing from sausage. In a dutch oven cook and crumble. Drain and set aside..
  3. While sausage cooks boil water for pasta and cook til al dente. Drain and set aside..
  4. To the Dutch oven add butter and flour. Whisk for 1 minute. Be sure to scrape delicious sausage bits up..
  5. Add milk and cream. Heat to just under boiling, stirring continuously until thick..
  6. Reduce heat to med/low. Add worchestshire, mustard, salt and pepper..
  7. Add 2 cups cheese. Stir until smooth..
  8. Stir in pasta, sausage, and drained corn..
  9. Transfer to 9 x 13 casserole dish. Top with remaining cheese..
  10. Bake 30 to 40 minutes, or until bubbly around edge, cheese browned on top..
