Traditionally, most pasta carbonara recipes are made with spaghetti, but it's also common to use bucatini, linguine, rigatoni or angel hair pasta. This carbonara recipe is the star of 'The Healthy Mix' for me, because it really captures the essence of a good carbonara without the guilt, carbs and bloating. What I love about this Thermomix recipe is that it also makes enough for two separate meals so you can also use it to make a healthy Lasagne.
Ingredients of thermomix, low fat carbonara
- Prepare 1 of zucchini.
- You need 20 grams of olive oil.
- It's 50 grams of white wine.
- It's 550 grams of water.
- It's 375 grams of evaporated lite milk.
- It's 1 tbsp of vege stock.
- You need 300 grams of spaghetti.
- You need 175 grams of bacon.
- It's 1 of egg.
- It's 50 grams of parmesan.

- grate parmesan 8 speed 10 sec, remove and set aside.
- chop zucchini speed 5, 3-4 secs.
- add olive oil, cook 100°, speed 1 reverse, 3 mins.
- add wine, water, milk, vege stock, cook 10 mins, 100°, speed 2 reverse.
- add spaghetti broken into thirds and bacon cut into thin strips, cook 100° 10 mins speed 2 reverse.
- whisk 1 egg and pour into running machine, reverse, speed 4 for a few seconds.
- pour into thermoserver and let sit a few mins.
- serve with parmesan.

For a low-fat option, use fat-free evaporated milk and packaged bacon bits. For a low-cholesterol option, use only the egg whites and double the amount of eggs used.
