Ingredients of Creamy Prawn & Olive Pasta

  1. Prepare 200 grams of pasta (any kind).
  2. You need 250 grams of prawns (shelled & deveined).
  3. Prepare 1 of onion, chopped.
  4. Prepare 5 clove of garlic, finely chopped.
  5. You need 4 large of tomatoes.
  6. It's 12 of black olives.
  7. You need 1/2 cup of cream.
  8. You need 2 tbsp of sundried tomatoes.
  9. You need 5 tbsp of tomato paste.
  10. It's 1 tbsp of dried oregano.
  11. It's 1 tsp of dried chilli flakes.
  12. Prepare 2 tsp of sugar.
  13. You need 3 tbsp of olive oil.
  14. Prepare of salt.
  15. Prepare 1 cup of water (drained from pasta).
  16. Prepare 1 bunch of coriander.
  17. It's 1 tbsp of piri piri chillies (optional).

Creamy Prawn & Olive Pasta step by step

  1. Boil pasta in salted water with one tablespoon olive oil till al dente..
  2. Cut three tomatoes and the stalks of the coriander and blend till smooth. Chop last tomato into large chunks..
  3. Drain pasta in colander once cooked, reserving one cup..
  4. Place the pan back on the fire and heat remaining olive oil..
  5. Add chopped onions, garlic and sauté for five minutes till soft..
  6. Add prawns, blended tomatoes, tomato paste, sugar, oregano, chilli flakes, salt and water and cook on medium heat till sauce thickens..
  7. Add cream and stir..
  8. Add remaining ingredients, mix and toss in pasta till evenly coated..
  9. Top with chopped coriander and piri piri chillies..
  10. Serve immediately..
