Ingredients of Lo Cal Pasta Fagioli

  1. You need 1 small of onion.
  2. You need 4 clove of garlic.
  3. Prepare 2 of bell pepper, any color.
  4. You need 1 cup of tomato sauce.
  5. It's 1 can of white bean, such as cannelini or navy beans (14.5 oz).
  6. Prepare 2 cup of chopped frozen spinach.
  7. You need 1 1/3 tbsp of basil, dried (half amount for fresh).
  8. It's 6 cup of vegetable broth.
  9. It's 3 tbsp of olive oil.
  10. You need 2 of celery stalks.
  11. You need 4 oz of any dried pasta (bite sized, such as seashells).
  12. Prepare 1 of parmesan cheese, for garnish.
  13. It's 1/2 tsp of salt.

Lo Cal Pasta Fagioli step by step

  1. Prepare pasta according to package directions..
  2. While pasta is cooking, rinse and drain beans;set aside..
  3. Dice onion, bell pepper, and celery; set aside..
  4. Mince garlic; set aside..
  5. Add the oil to a large saucepan on medium heat..
  6. Sauté onion, bell pepper, celery and garlic for 5- 7 minutes or until the onions are translucent..
  7. Reduce heat and add tomato sauce, broth, salt, spinach, basil, and beans..
  8. Cover and simmer 15 minutes..
  9. Stir in pasta and heat until warmed through..
  10. Serve with a garnish of Parmesan cheese..
