Ingredients of Creamy Prawn & Olive Pasta

  1. You need 200 grams of pasta (any kind).
  2. It's 250 grams of prawns (shelled & deveined).
  3. It's 1 of onion, chopped.
  4. You need 5 clove of garlic, finely chopped.
  5. Prepare 4 large of tomatoes.
  6. Prepare 12 of black olives.
  7. It's 1/2 cup of cream.
  8. You need 2 tbsp of sundried tomatoes.
  9. It's 5 tbsp of tomato paste.
  10. Prepare 1 tbsp of dried oregano.
  11. Prepare 1 tsp of dried chilli flakes.
  12. You need 2 tsp of sugar.
  13. You need 3 tbsp of olive oil.
  14. Prepare of salt.
  15. You need 1 cup of water (drained from pasta).
  16. It's 1 bunch of coriander.
  17. You need 1 tbsp of piri piri chillies (optional).

Creamy Prawn & Olive Pasta instructions

  1. Boil pasta in salted water with one tablespoon olive oil till al dente..
  2. Cut three tomatoes and the stalks of the coriander and blend till smooth. Chop last tomato into large chunks..
  3. Drain pasta in colander once cooked, reserving one cup..
  4. Place the pan back on the fire and heat remaining olive oil..
  5. Add chopped onions, garlic and sauté for five minutes till soft..
  6. Add prawns, blended tomatoes, tomato paste, sugar, oregano, chilli flakes, salt and water and cook on medium heat till sauce thickens..
  7. Add cream and stir..
  8. Add remaining ingredients, mix and toss in pasta till evenly coated..
  9. Top with chopped coriander and piri piri chillies..
  10. Serve immediately..
