sig's Fagioli ( Italien Bean and Pasta Soup) Sometimes you'll see white beans, sometimes borlotti beans (basically the same thing as cranberry beans), and sometimes even kidney. This Italian Bean Soup is from an Italian chef! His mirepoix recipe makes it easy.

  1. You need 1 small of can each of haricot, boretti and pinto or blackeyed beans , drained and washed.
  2. You need 2 tbsp of olive oil.
  3. It's 2 small of onions finely chopped.
  4. You need 2 tbsp of tomato puree.
  5. It's 2 of sprigs each rosemary and basil.
  6. You need 1 small of red chilli pepper ( optional).
  7. Prepare 3/4 liter of vegetable stock (add more if needed).
  8. Prepare 1 of good pinch of salt and fresh cracked pepper.
  9. It's 1 cup of of soup pasta or orzo, rice sized pasta..

  1. boil the beans gently for about 3/4 if an hour.
  2. drain and puree half of them..
  3. saute the onions in olive oil.
  4. add to the pureed beans.
  5. add chopped chilli If you like.
  6. add the stock basil, rosemary and tomato puree.
  7. add the whole beans heat to boiling point and add the pasta.
  8. cook for about ten to 15 minutes.
  9. season with salt and pepper.
