Over time, I have made different versions of this pasta.
Sometimes I add white beans, sometimes mushrooms or just make a simple creamy sauce with grated lemon zest.
This creamy, savory pasta dish comes together in just one pot—no need to boil the pasta separately.
Ingredients of Creamy Lemon Pasta with Mushrooms
- You need 1 packages of Cooked Pasta - Al dente.
- Prepare 3 clove of Garlic - chopped.
- Prepare 1 packages of Fresh mushrooms- sliced.
- Prepare 1/2 cup of Slivered Almonds.
- Prepare 1 of Splash of White Wine or Vermouth.
- You need 1/2 cup of Grated Parmesean Cheese.
- Prepare 1 of Lemon - Juiced.
- Prepare 1 of Salt and pepper to taste.
- Prepare 1 of Olive Oil.
- You need 1 packages of Sweet Light Cream.
Creamy Lemon Pasta with Mushrooms step by step
- In a large, deep skillet sautee chopped garlic in olive oil, with a pinch of salt.
- When garlic starts to get golden, add almond slivers and sautee till toasted.
- Add sliced mushrooms, sautee until softened.
- Add a generous splash of white wine or vermouth - whatever is handy.
- Stir until flavors are blended.
- Add package of sweet cream, mix either other ingredients and lower heat..
- Once mixture becomes a nice light brown and starts to bubble, add parmesan and stir well.
- Add the lemon juice and continue stirring as mixture thickens.
- When mixture has thickened and is bubbling gently, add in pasta and fold thoroughly so that pasta is enveloped in sauce.
- Cover and let cook on low for 2-5 min, stirring occasionally.
- Serve right away.
