Pasta Upma Ever get tired of the suji upma? Try this wonderful twist for a change. Vermicelli is known by a host of other names - Sevia, Seviya, Semiya, Sevai.

Ingredients of Pasta Upma

  1. Prepare 1 cup of pasta, boiled al dente.
  2. It's 1 cup of mixed veggies, cut lengthwise.
  3. It's As required of (beans, carrot, beetroot, peas, red cabbage, potato, etc).
  4. It's 2 tbsp of oil.
  5. You need 1/2 tsp of mustard seeds.
  6. You need 1 tsp of urad dal (split black gram).
  7. Prepare 1 sprig of curry leaves.
  8. You need 1 of onion, chopped.
  9. It's 1-2 of green chilies, chopped.
  10. Prepare 1 tsp of grated ginger.
  11. You need to taste of salt.
  12. You need 1 tsp of coriander powder.
  13. It's 1 tsp of sambar powder.
  14. You need 1 tbsp of coriander leaves, chopped.

Pasta Upma step by step

  1. Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, onion, ginger, green chilies and curry leaves..
  2. Saute till light brown. Add the veggies and all the dry spices. Give it a stir and add 1/2 cup water. Cover and simmer till the veggies are cooked..
  3. Now add the boiled pasta. Stir fry for 2 minutes and switch off the flame. Garnish with coriander leaves and serve for breakfast / snack along with some chutney..

I tried a smiliar 'upma' type preparation with my leftover cooked pasta and it worked great. Didn't prepare any sauces, just tossed pasta in veggies and chilli powder. I have used Penne however you can try this recipe w How to Make Mixed Vegetable and Angel Hair Pasta Upma. Cook the pasta as per the package instructions. Heat oil and add the mustard seeds.
