  1. Prepare 450 grams of dried pasta.
  2. You need 8 of tomatoes.
  3. It's 200 grams of firm goats cheese.
  4. It's 4 tbsp of olive oil.

Pasta with Roast Tomatoes and Goats Cheese step by step

  1. Pre heat oven to 190C.
  2. Drizzle toms with half olive oil and roast for 20 mins.
  3. Cook pasta in salted water, drain, return to pan.
  4. Roughly mash toms with fork and stir into pasta. Crumble in goats cheese and stir in with remaining oil.

Add in reserved cooking liquid and stir until the cheese melts and the pasta becomes creamy. Sadly, it was very dull and lackluster. It's definitely missing something in my opinion to give it more of a kick - perhaps sundried tomatoes. Add goat-cheese mixture and asparagus to pasta; toss to combine, adding more pasta water if necessary for sauce to coat pasta. I also added some roasted tomatoes to "cut" the intensity of the goat cheese.
