Ingredients of spicy pasta salad with smoked gouda, tomatoes and basil
- Prepare 1 of kosher salt.
- It's 12 oz of penne pasta.
- Prepare 1/2 cup of mayonase.
- You need 1/4 cup of whole milk.
- You need 1/4 cup of white vinegar, plus more if needed.
- You need 1 of freshly ground pepper.
- You need 1 1/2 tsp of adobe sauce from can of chipoltes.
- Prepare 10 oz of grape tomatoes halved lengthwise.
- It's 1/2 lb of smoked gouda cheese cut into small cubes.
- Prepare 24 of fresh basil leaves, thinly sliced.

- bring large pot of water to boil.
- add pasta and cook.
- drain and rinse under cold water, set aside when cool.
- dressing.....
- mix mayonnaise, milk, vinegar, one half teaspoon salt, pepper to taste and adobe sauce in small bowl.
- in large bowl combine pasta, dressing, tomatoes, and gourda.
- taste for seasoning adding more salt and pepper if needed.
- also add extra teaspoon or 2 of vinegar if needed.
- stir in basil at the end.
- refrigerate for couple of hours before serving.
It also pairs up an unlikely duo: smoked gouda and a creamy chipotle pepper sauce. Drain and rinse in cold water until no longer hot.
