  1. Prepare 1 of kosher salt.
  2. It's 12 oz of penne pasta.
  3. Prepare 1/2 cup of mayonase.
  4. You need 1/4 cup of whole milk.
  5. You need 1/4 cup of white vinegar, plus more if needed.
  6. You need 1 of freshly ground pepper.
  7. You need 1 1/2 tsp of adobe sauce from can of chipoltes.
  8. Prepare 10 oz of grape tomatoes halved lengthwise.
  9. It's 1/2 lb of smoked gouda cheese cut into small cubes.
  10. Prepare 24 of fresh basil leaves, thinly sliced.

  1. bring large pot of water to boil.
  2. add pasta and cook.
  3. drain and rinse under cold water, set aside when cool.
  4. dressing.....
  5. mix mayonnaise, milk, vinegar, one half teaspoon salt, pepper to taste and adobe sauce in small bowl.
  6. in large bowl combine pasta, dressing, tomatoes, and gourda.
  7. taste for seasoning adding more salt and pepper if needed.
  8. also add extra teaspoon or 2 of vinegar if needed.
  9. stir in basil at the end.
  10. refrigerate for couple of hours before serving.

It also pairs up an unlikely duo: smoked gouda and a creamy chipotle pepper sauce. Drain and rinse in cold water until no longer hot.
