- In a large pasta bowl mix 1/2 the spinich, zest from 1 lemon , half the ricotta cheese & some of the grated parm. cheese..

- Oh ! save some pasta water. I like to mix in about 1/4 cup to keep it moist..
- To change it up a bit you can sautee a clove of garlic in a little olive oil and throw it into the mixture at the end. Enjoy.
