- You need of percutto (sorry i dont know how to spell).
- Prepare of green onions (chives).
- Prepare of salt and pepper.
- You need of olive oil.
- Prepare of mixed heirloom tomatoes (if you cant find regeular tomatoes are great too).

- cut spaghetti squash in half place in casserole dish flesh side up fill have of dish w/water cover with foil and cook in oven at 450 until tender about 40mins.
- after squash is cooked take a fork and scrap the inside flesh out length wise, it'll look just like spaghetti.
- during the summer I let squash chill and finish salad and serve cold and winter time I add ingredients right away and serve hot..
- chop onions, if you can find the mixed baby heirlooms just slice in half if you can only find large tomatoes dice. cut/rip purcuttio into bite size pieces.
- mix onions and percuttio with squash drizzle with olive oil, I'd say about 3 tblsps just as long as everything is coated. salt and pepper to taste. Enjoy!.
