Ingredients of Pasta with speck (type of cured ham), mushrooms and saffron
- You need 500 g of pasta.
- You need 100 g of Speck.
- It's 100 g of Mushrooms.
- It's of Small chopped onion.
- It's of Saffron.
- It's of White wine.
- It's of Olive oil.
- Prepare of Just a touch of double cream.
Pasta with speck (type of cured ham), mushrooms and saffron step by step
- Cook pasta according to instructions. Be ready to drain 1 min before cooking time. Chop onion and fry gently in oil, add mushrooms, saffron and fry for 4-5 mins. Add finely chopped speck (if using pancetta, add at same time as mushrooms) stir and throw in a glug of wine, cook on high for 1 min.
- Near the end of cooking, add a touch of cream to the sauce. Tablespoon or so is more than enough. Drain pasta with a min to go and finish the cooking inside the sauce. Serve with Parmesan if you fancy it :).
